Emily's Breakfast Bowl

Good morning readers. I thought I'd share a new recipe with you! Cooking and developing new things that I'm able to eat is one of my favorite things. So I want to start integrating more food and recipes to the blog. Some of you know this, but I am allergic to a lot of foods. I cannot eat gluten, dairy, or eggs...and there are some other little random things too but these are the main foods I cannot eat. So it is hard because most GF foods contain eggs, and most Vegan foods contain gluten. So it is a rare find when the food is GF and Vegan. And if I do find something like this...most of the time, it isn't too yummy. But I can say with 100% confidence that this breakfast is one of my favorite things to eat! And I'm going to share my perfected recipe with you :).

This is the breakfast of champions. In fact, I eat this breakfast every morning. It is Gluten Free, Dairy Free, and Egg Free. It contains lots of protein, healthy fats, and carbs. I usually work out in the morning, so the carbs come in handy after my workout. I try to not eat too many carbs, but I can never cut out fruit. It's nature's own dessert.

Emily's Breakfast Bowl

1 cup of frozen wild blueberries or other frozen fruit mix (raspberries, blackberries, or blueberries)

1 handful of spinach (about 2 cups)

1 banana (frozen is better)

1 tablespoon natural peanut butter

1 scoop Vegan Chocolate Protein Powder (I use Sunwarrior Brand)

1 tablespoon cocoa powder

3-4 tablespoons unsweetened vanilla Almond Milk (add to desired texture of bowl- I usually only add enough for everything to blend, because I like a think textured bowl)

Toppings:

I usually mix these up all the time, but lately I like using a sprinkle of cranberries, walnuts, almonds, unsweetened dried whole cranberries (I get these at Trader Joes- they add a touch of tart), sliced banana, and a whisper of cocoa powder on top (to add some more rich chocolate flavor)

Other ideas would be cocoa nibs, cashews, manuka honey, sunflower seeds, strawberries, oats, chia, flaxseed, sprinkle of instant coffee, or any other kind of cereal.

Add everything (except of course the toppings) to blender and blend. Pour into bowl :)...then add your desired toppings!

  1. Yummy! Great recipe! May I ask what DSLR camera you use? I am looking to get one...either a Canon 60D or 70D. I am just interested in what others are using. Thanks!
