Happy Friday! It's another rainy day here in Southern California...and while I'm the millionth blogger to comment on the weather, I must say it is a perfect day to cuddle up, turn on Gossip Girl, and eat some scrumptious banana pancakes. If you don't know much about me, here, I'll give you a fun fact. I eat pancakes everyday. Everyday, Emily?! Why, yes, yes I do :). I have a chocolate version to these pancakes that are just as yummy...but I like to switch them up once in awhile.
I'm gluten intolerant...haven't eaten any
gluten since I've been 11. So if you need any help or suggestions on
how to eat gluten-free, I'm your girl :). Since eating gluten free
eliminates lots of carbs, its easier for me to stay on a low carb diet. I
feel my best when I'm not eating many carbs. So I've made this pancake
recipe that has only a couple carbs in the whole batch! They are super
healthy, full of healthy fats and protein. That's why I can eat them
everyday...but the main reason why I do eat them everyday is because
they are just so darn good and they completely satisfy my sweet
tooth!...well...almost always ;). Sometimes I just gotta eat that cookie
dough. So without any further adieu, here's the recipe :)!
Pancake Ingredients:
1/3 cup lowfat cottage cheese
2 eggs
1 teaspoon vanilla
pinch of salt
3-4 tablespoons stevia baking sweetener
1 Heaping Scoop Isopure Zero Carb Banana and Cream protein powder
Whipped Topping (optional):
3 tablespoons Fage yogurt
Stevia packet
Walnuts
**Waldens Pancake Syrup**<----this syrup is amazing! I suggest try it. Zero carb. Zero sugar. GF.
1.
combine the wet ingredients first, then add your stevia and protein
powder. Mix real good then cook those suckers up in a skillet!
2. Mix the whipped topping in a bowl and place on top for a yummy tart taste!
3. Drizzle the syrup over them and eat up!
